What Easy Set up should I use?

I need to make the right setting in the easy set up area. In the past I would need to render everything that I worked on as I worked on it. Also, Im just not sure what it should be set to. I shoot interviews and really try to keep it as simple as possible. I think Apple ProREs 422 is rich but which one? There are a lot of choices.What is the most reliable setting?

The Easy Set Up is the format for your source. Set wrong, FCP won't find your camera. Set your Sequence to the same. Why would you need ProRes? Are you planning to do a lot of color grading or composition? LT is good in most cases (it's about the same as AIC).

I thought the ProRes capture had something to do with the poor quality final product. How do I get the best quality for the final product? Does any that make sense?

Also, I'm using a Canon HV40 Not a Sony. Will that matter if the setting is for Sony HDV?

The Firewire protocol was (co-)developed by Sony, so don't sweat that part.

The less transcoding steps you have in-between, the better is your end result.

Question: What is your final product - DVD/BD, web, projection?

I would love to maintain projection quality, but really most of the interviews I do will end up on youtube or the web. But I want to maintain as high a quality as possible. It's one thing to be a rookie, it's another thing look like a rookie

A 5000kbps h.264 is sufficient for both.

I'd concentrate more on content than on issues that 99% of your audience won't even see.
