This is from the FCS device compatibility list (http://www.apple.com/finalcutstudio/resources/devicelist.php) (appears when you click on 'More info' next to the HV20). What does that mean exactly?

no clue...but it is all ntsc mentioned for hv20. no pal. i have a pal model and use w fcs2 with no problems.

I believe it means FCS2 cannot handle 24p Cinema Mode (New iMovie 08 cannot handle 24p either from what I have been reading). 1080i HD is it.

It says that because the HV20 only outputs 1080i/60 via the MiniDV tape. It converts 24p mode into 1080i/60 when it saves it to the MiniDV, and so while techincally it records 24p video, it stores it in 1080i/60 interlaced format. you can get the information out, and edit it in 24p in FCS, it just takes a little work. I am trying to do it now for the first time. There are many posts about the 24p workflow.
Give it a shot.

Erm, I have the PAL version so I interpreted it differently as 24p doesn't apply to me. In any case, 1080i50 is supported and works fine with FCS2.

There is no problem doing 24p editing with HV20 footage in Final Cut Pro.
Not sure what that compatibility was talking about - probably that it won't do auto pulldown for the HV20 since the HV20 doesn't have the flags embedded (no NLE will do the pulldown for it for that reason).
Just use Compressor 3 or JES Deinterlacer to get to 24p and you'll be fine.
Lots of threads on here explaining how to do it - it's very easy.

Skinnyboy, do you have a quick instructions on how to do the pulldown using FC3 on a Macpro? Can FC3 do it or should I use JES...?

HDV 1080P24 yep it is in FCS2. you still need Compressor however.

Compressor 3 allows you to do a batch of clips at once. JES (unless it's been updated) only allows one at a time so you have to sit there and babysit.
Not to mention it's easier to stay within the Final Cut Studio apps because they work with each other.
